I've seen traffic, cops, opponents, trains, trams and even seagulls being changed. But has anyone ever edited the sailboat, ferry or ducks?

As far as I know, nobody changed also those objects through a mod. Those objects file names begin all with the "giz_" prefix.
FYI, the seagulls is a new object introduced in the game with MM2 Revisited mods. They use the "sailboat" .pathset file features to move around, while the wings flapping is done though animated textures playing with the hiding and showing of each of the six wings positions (three per wing).

They do replace the sailboats, they're just "sailboats" modelled as seagulls that work the same way sailboats do in the game so they can work in the game, as Franch explained
