Well IMO Rigs of Rods have the most realistic crash and damage physics.

When it comes to older games, MM1. The visual damage on cars may not be amazing, but it's the physics that send your car into insane rolls, the sounds, and flying wheels that make it entertaining.
When it comes to today, probably GTA IV. Nothing beats that game when you have a higher deformation mod.

GTA IV and Burnout Paradise have a good physic, in particular for the vehicles damaging. What's missing is a great game series which has a very good physics and a great vehicles damaging: the FlatOut series (except the 3). The Milestone's WRC series and all the recent Codemaster's games are decent in them.
About old games, I agree with Dummiesboy for MM1 physics. Of Carmageddon 2 I remember the good vehicle destructibility with parts losing.

Done...that was all i was missing:FlatOut and Recent Codemasters games,like GRID,and old ones too,like TOCA 3,and that one for PSP was good too,i have it in my PSP,wow i missed alot of games....well,but i made this thinking of older games instead,maybe i'll make another poll sometime,maybe not about crashing physics...i'm thinking into something different,like difficulty or how much fun you can have...GTA IV and Burnout Paradise have a good physic, in particular for the vehicles damaging. Not sure if any of you have played it, but I really like Colin Mcrae Rally 2005. It has some very realistic crashing/damage physics for the most part. You can set damage to 'normal' or 'heavy', heavy being more realistic. You can damage your engine, cooling system, axles, bodywork, etc. Really neat.
I like girls kind of like chicken wings; hot, tender and half-price on Tuesday.
