Yes, it's possible. You have to extact the *.aimap and *.aimap_p files from the mm2core.ar file with deAR2 and then open them with Editor and rename the entries under "[opponents]" with the appropriate basename of a MM2 car. Then save the files, put them into a new folder called "race" and add the "race" folder to an archive (*.rar or *.zip) and then rename the file extension to *.ar. Also be careful to name the right count of them, so if you have e.g. three opponents, write also under "[opponents]" a "3". Don't forget to do the same in the *.aimap_p file. :)

It's like you say Matt, but you must say that you need only Windows Notepad to edit the .aimap and .aimap_p files, not an "editor". Also, the .ar file must be compressed only in ZIP format, so you can't made a .rar file and then rename it to .ar, because doesn't work.
You can change any opponent car of any in-game race with this method, but if you change them with too much detailed ones the game could crash while the race loading. To see and know the basename of a car just open its .ar file with WinZip; if it's locked, rename it to .rar and open it with WinRar.

Well, I meant the Windows Notepad, it's called Editor on my German Windows XP. Sorry.
